a little tension building up

In the hope of getting even more excited about the upcoming Tassie trip, I decided to search for photos and read reviews of the place we’re staying at. Hmmmm… wrong move.

I have a growing feeling of worry in me because 90% of the reviews I have read aren’t that good. I hope it won’t be as bad as it sounds. All I ask is for a decent bed, non-smelly room and a clean bathroom.

I’m sure it will be okay. H and I will always find things to see and do to entertain ourselves, OR we can stay in and slow down for a change. You know what, that’s the whole point of this mini-break anyway so, regardless of the hotel, it’s all good.

My fascination (oh, alright OBSESSION) with coupons has landed us a trip to St Helens in the East Coast of Tassie for H’s birthday next week. Perfect because it’s a long weekend here in Oz for the Queen’s Birthday.

After the quick weekend at Daylesford, we’re both looking forward to another more relaxing and longer weekend away.

I think it’s going to be cold, but that’s okay. It makes it perfect for sleeping in.

continuing with the chocolate obsession

I can’t recall any other time in my life where I loved chocolate as much as I do at the moment. It’s definitely the flavour of my… er… quarter?

I think it all started with my champorado craving that turned into the crinkle cookie itch, and now I have my eyes set on a new chocolate goal – chocolate caramel tart. I have about 5 recipes I’m studying at the moment trying to decide what to try.

In the meantime, I get my chocolate fix from this:

We almost ate the whole box!!!! It’s pure bliss.. smooth heaven in the mouth… now I want some. Ack!

I found some copy-cat recipes of this that have made their way to my recipe pile. Just in case we eat all our stash and can’t get anyone to fly any of them in for us.

Sounds like a long list of recipes to try! While I have a new recipes to take on, I haven’t forgotten that I still have to try to actually make the champorado and also attack the sans rival. N said she’d help me with the sans rival and I won’t say no because it makes me a little nervous – must be all the butter in it and I’m starting to think butter is my nemesis.

crumble judgment day

I’ve been practicing making crumble (another one that ive never made before in my life) with T’s recipe. And tonight, I made one for dessert after dinner at her house. Aaaack!

I’m nervous making something for the same person who wrote the recipe.

As long as it’s edible, I’m happy. Lol.

ever reliable adobo

We were supposed to have a potluck lunch at the office tomorrow so I made some Chicken Adobo last Tuesday night. Since the plans have changed and the potluck cancelled, I decided to take my big batch of Adobo to work today for people to try.

I’m really happy that people liked it! Makes me proud of myself that I share bits and pieces of being Filipino to my work mates here – feeling ambassador!

I’m sure every Filipino has his/her own Adobo recipe – I even have a different one to my mom and I can imagine others in the family will have different ways of making it. Actually, come to think of it, I make my Adobo slightly different each time too!

Any google search will tell you that Adobo is basically cooking with vinegar and soy sauce, garlic and herbs. You can choose different things that you cook the adobo way: chicken, pork, squid, kangkong, okra, and the list goes on!

The basic ingredients for flavour are vinegar, soy sauce, and garlic. Traditionally you add bay leaves to this but you can change it up a bit by replacing the bay leaf with other herbs like rosemary, or thyme.

Other personal touches that I’ve heard and tried as well as a twist to our beloved Adobo:

  • Adding hard boiled eggs. Some use chicken eggs, some quail eggs.
  • Add chopped onions. A lot of people do this but I rarely do because I can’t really taste the onion in the end. LOL.
  • Add olives. I’d be careful doing this only because you are already working with strong flavours like the vinegar.
  • Dry adobo vs very saucy adobo. I like mine swimming in the sauce because I can eat the sauce and rice with no meat on it.
  • To thin the sauce, some add water. Or some remove the meat and leave the sauce to simmer after adding water.
  • Sweeter adobo by adding a small amount of sugar or Sprite. Yes, the softdrink.
  • Adobo flakes. This is a really popular way of ‘recycling’ adobo. It involves breaking up the meat and frying them in a pan until the meat fibres are all crunchy. This gives a whole new list of food ideas using adobo flakes – from congee topping, to fried rice topping, to sandwiches or just finger snacks!

Here’s my Chicken Adobo recipe that I make for H. I apologise in advance for not having a lot of measurements on this. I’ve tried to measure and the adobo tastes different when I do that!

Ingredients –

  • Chicken wings and thigh part. I break up the wings to 3 smaller pieces so I can cook the boniest part of the chicken for the flavour and fish them out if I don’t want to serve them.
  • Chopped garlic. I like a lot of garlic in mine so use at least 4 big cloves.
  • White vinegar. I don’t like using cider vinegar but have seen recipes using it.
  • Soy sauce. Not Kikoman for me. Just the regular dark soy sauce for me.
  • Rosemary. This helped me introduce adobo to H. At least it has a more western taste to it. I prefer to use the rosemary still on the stalks but the bottled ones are okay too.
  • Peppercorns

Method –

  • In a deep pan, heat a small amount of oil, just enough to coat the base. Use medium heat.
  • Add the chopped garlic and the boniest chicken pieces at the same time. Stir.
  • Once you start to smell the garlic, add the rest of the chicken pieces.
  • Leave this and stir occasionally until the chickens start to brown and the natural oils start to come out.
  • Add the peppercorns and rosemary.
  • Add equal amounts of vinegar and soy sauce. I normally add as much until the meat is almost covered.
  • Cover and bring to a boil. At this point, your apartment will start smelling like adobo. So if you have laundry in the house, you might want to move it. LOL. Smells really good, though!
  • Once it boils, turn the heat as low as you can and leave this covered until the meat starts to fall off the bone . It normally takes me at least 30 minutes. You can stir it occasionally as you check if the meat is cooked.

Serve with hot steamy rice! I assure you, you will have a lot of rice with this. :p

Tried and tested tip – cook your adobo at least 1 day ahead of when you plan to eat it because it tastes so much better over a day old.

Because of the ingredients, Adobo stores really well especially when frozen. Imagine this, in the olden days of the tropical Philippines, our ancestors didn’t have refrigerators yet this was a staple food across the nation because it stays good for a really long time.

That’s it. If you end up trying this recipe, please please please let me know what you think. I’m also happy to answer any questions if you have any. I realise that it’s hard to try a new recipe if you’ve never had the food before AND without measurements. But I promise you this is one of the easiest and tastiest things you’ll eat in your life.

We’ve decided to buy the chairs we saw at Daylesford over the weekend!!!

Now, I know it seems silly to make such a fuss over chairs, but I’m really stoked about this decision. I fell in love with those chairs the moment I saw them at RubiLu. And now I can claim them as mine!!! (Oops, I should more fairly say that WE can claim them as OURS.)

daylesford dream

We’re back!!!

We had such a good time at Dayelsford and it’s exactly what we needed!

Friday departure was delayed by a bit of work but we eventually made our way at 8pm. It was dark and I’ve only ever been in a car to Daylesford in the daylight so, I admit, I was a bit worried that at any stage an animal might cross the road (or in my wild imagination, a white lady or zombie appears!). The last leg along Charlie’s Road was the most exciting because it was rough road and up and down hill. Some hills you went up not seeing over it and looked like the road just dropped – like the end of the earth in the darkness!

Once we found Avalon, the first thing I noticed was the beautiful sky. So many stars!!! If it wasn’t freezing, I would have stayed outside and stared at the sky. Inside the villa, we settled in quick. Scouted the rooms and drawers and immediately drew a bath. Boy was it heaven! We must have stayed there for ages.

Waking up to the birds was a great way to start my Saturday. It was later in the morning because we let ourselves sleep in but I still made scrambled eggs and toast so we had something in our tummies before our spa appointment.

12:15 we made it to Queensberry Studio for our 2 hour Therapeutic Treatment. This kicked off with another 40 minute spa bath soak with Basil and Peppermint aromatherapy and Pine Needle foam. Then capped with an hour tailor fit relaxing massage. I asked for my therapist to focus on my shoulders because I hump over my desk all week. Oh my was it good. By the time she got to my head (to help with my migraines), I was sound asleep. She could have taken a break and I wouldn’t have known because I was knocked out! After my massage, I got myself an extra treat by getting an additional 15 minute foot massage. Glorious!

Not really sure what H got because he was in a separate massage room but what we really enjoyed was the privacy. Queensberry Studio only takes 2 customers at a time so we had the whole place to ourselves! It was definitely worth the money. Their prices were already lower that most of the bigger outfits and still they were quite generous with the time we spent there. We will definitely come back – perhaps get the 4 hour treatment next time. LOL.

After our relaxing massages, we were well and truly hungry. In fact, both our tummies were grumbling towards the end of the massages. We walked on the main street and had pizzas and coffee at Koukla (Frangos and Frangos Cafe). I preferred H’s braised goat with roquette, red pepper and sour cream pizza on home-made dough and cooked in a wood fire oven. This was tastier than my safe proscuitto, tomato and basil pizza.

Muscles loose and tummies full, we walked along the main road some more and popped into the stores. H bought more comics from Paradise Books and I bought a vanilla slice and a mars slice from Pastry King Cafe Bakery.

The rest of the afternoon was spent relaxing back at the villa. It was such a beautiful drive in the daylight as we got to appreciate the spectacular views of the rolling hills and mountains around us.

Before heading to dinner, we met up with H and S to say hi over a cuppa. I haven’t seen them in over 2 years and they’re as lovely as I remember them. We got carried away and ended up almost missing our dinner reservation at Sault!

Good thing we made it because it was soooooo good. I’ve been to Sault once with T and N, and I had all fingers crossed that H would like it as much as I did. Oh boy did Sault deliver.

For starters, I had twice cooked pork with smoked eel and pea puree with apples and some fruity jam; H had scallops wrapped with proscuitto, cauliflower puree and baby herbs. For main I had crispy skinned Barra with pea puree (coincidence that I had this on both dishes), squid ink and a few pieces of squid; H had roasted duck breast and a couple of mash like things (I don’t remember!!!) with guinness sauce. Dessert I ordered spanish churros with came with chocolate dip, creme brûlée and caramel ice cream; H had granny smith apple pudding with ginger mousse and biscuit. Y-U-M.

Needless to say we woke up happy this morning. It was freezing overnight – it was minus 1 at 5:15 this morning (I know this because my stupid alarm went off!), but we woke up happy and stayed in bed until it was time to leave at noon. Yet another luxury we don’t get on a regular basis back in the city life.

On the way to brunch I found a cool glow mesh purse at the Daylesford bazaar for a bargain. We had brunch at Cliffy’s where I also stocked up on Murray River Salt, Vanilla Sugar and Olive Salt. We also ended up buying Istra Prosciutto.

After brunch, we walked towards the Daylesford market and stopped over Rubilu where I fell in love with 2 blue vinyl chairs that I really really really want to buy. H was reasonable enough to stop me from buying it and said that we should think about it this week before deciding. I know I’ll end up buying it!!!

The walk around the Daylesford market was quick because some stalls were packing up. I ended up buying a super chic Scottish Hand-woven Harris Tweed hat. It wasn’t cheap, but I’m really happy with it.

We’re back in Melbourne now and still riding the high of an awesome weekend in country Victoria. It’s left us not only feeling refreshed but also inspired to take more short trips to the idyllic country towns around us.

Until the next adventure – hopefully includes picking up my 2 blue chairs from Rubilu!

weekend pick-me-up for the weary

I’m counting down to the end of today. I just want to hop in the car and head to Daylesford!!! Well, Hepburn Springs, really but to me they’re almost the same place.  :p

We bought a coupon to stay 2 nights at the Avalon in Spa Country Villas (here’s the website). I don’t even remember how long ago I bought them last year but I think we’re really lucky that we booked this weekend because H and I are both knackered from this week!

Looking forward to a few things – mostly revolving around food.

  • Dinner at Sault on saturday night. The last time I was there with N and T, I was so full they should have rolled me out the door to the car.
  • Brunch at Cliffy’s before heading to the Daylesford sunday market.
  • 2hour spa treatment/massage. OH YEAH!!!

I don’t think I’d plan any more than that simply because I want us to just chill and do nothing.

C’mon 5:30, get here already!!!!!!!!!!

Dark Shadows (2012)

As much as I love going to movies with no set expectations to get the most candid reactions while watching them (like tasting food with a clean palate), its hard to do that with a Burton-Depp combo. Like it or not, viewers will have a specific standard in mind.

As I’ve posted a few days ago, this week has been really brutal and H and I luckily bought tickets to see Dark Shadows last Tuesday night. It looked and felt like a Burton-Depp movie – which to me are generally dark-yet-comic-yet-intelligent. Parts of the story would have made more sense if there was more time to develop them, but I got the gist and was entertained enough to say I like the movie.

I’m starting to think that I may be a secret fan of Johnny Depp. Secret not because I’m ashamed of it, but because I don’t realise how much I think I really like his work. There’s something about him that really fits very uniquely memorable characters – from Edward Scissorhands to Benny and Joon to Willy Wonka to the Pirates Series.
